One of our favorite ways to spend a warm summer day is to meet friends for a picnic in one of Denver's awesome parks. Lucky for you, we have laid out a perfect and simple menu for your next meal enjoyed al fresco.

Cheeseboard

Easily the best part of any picnic or party is a cheeseboard. Even better, it requires no cooking and very little prep. The key components are 3-4 types of cheese, bread and/or crackers, fresh fruit, and jam. A few other nice elements you can add are olives, cornichons, nuts, and dried fruit.

For the cheese, we suggest one of each of the following:

  • one hard, aged cheese like cheddar or aged gouda
  • one soft & spreadable cheese like goat cheese or brie
  • one semi-hard cheese like gouda or gruyere
  • one funky cheese like gorgonzola or bleu

Tomato & Peach Caprese Salad

For this simple salad, grab some fresh mozzarella or burrata, fresh tomatoes, peaches, basil, olive oil, and balsamic vinegar.

Tear or slice the cheese and place on a platter. Top with sliced tomatoes & peaches. Drizzle olive oil on top. Add several drops of balsamic vinegar, then salt and pepper to taste. 

 

Panzanella Salad

Rosé Sangria
